Quick 15-Minute Vegan Dinners

The biggest enemy of home cooking is not lack of skill, it is lack of time. By the time you get home, the idea of a 90-minute recipe is exhausting. But a great vegan dinner does not need to take all evening. With a few fast techniques and a stocked pantry, you can have a real, nourishing meal on the table in 15 minutes. Here are five reliable weeknight dinners and the principles that make them fast.

1. Chickpea and spinach stir-fry

Drain a can of chickpeas, toss them into a hot pan with a little oil, garlic, and chilli flakes, and let them crisp for a few minutes. Add a big handful of spinach, a splash of soy sauce, and a squeeze of lemon. Serve over microwave rice or with flatbread. The whole thing takes about 12 minutes and delivers protein, iron, and a lot of flavour from a handful of pantry staples.

2. 10-minute tofu tacos

Press a block of firm tofu while you chop an onion and a pepper. Crumble the tofu into a hot pan with the veg, add a tablespoon of taco seasoning and a splash of tomato passata, and cook until the liquid reduces. Spoon into warm tortillas with avocado, salsa, and a squeeze of lime. This is faster than waiting for delivery and infinitely better.

3. Speedy tomato and white bean pasta

Boil your pasta. In a second pan, sizzle garlic in olive oil, add a tin of chopped tomatoes and a drained tin of cannellini beans, season well, and let it bubble for five minutes. Toss with the cooked pasta and finish with fresh basil and a drizzle of good olive oil. Beans make it creamy and protein-rich without any sauce work.

4. Peanut noodle bowl

Cook quick-cook noodles. Whisk together peanut butter, soy sauce, lime juice, a little maple syrup, garlic, and warm water to make a sauce. Toss the noodles in the sauce with shredded carrot, edamame, and spring onions. Add chilli oil if you like heat. It is rich, salty, sweet, and on the table in under 15 minutes.

5. Smashed chickpea salad sandwich

Mash a can of chickpeas with vegan mayo (or a little olive oil and lemon), add finely chopped celery, red onion, dill, salt, and pepper. Pile onto good bread with lettuce and tomato. With a bowl of soup or a side salad, it is a complete dinner that feels like comfort food and takes under 10 minutes.

The principles behind fast vegan cooking

First, keep a pantry that can make a meal. Canned beans, tomatoes, coconut milk, pasta, noodles, rice, tahini, peanut butter, soy sauce, and a few jars of paste mean dinner is always possible. Second, lean on quick-cooking proteins. Tofu, tempeh, canned beans, and edamame are ready in minutes, unlike a roast or a stew. Third, use acid and umami to do the heavy lifting for flavour. A squeeze of lemon, a splash of soy, a spoon of miso, or a dash of chilli oil can make a 10-minute meal taste like it simmered for an hour.

A note on prep

Ten minutes of weekend prep makes weeknight cooking even faster. Chop onions and peppers in advance, cook a batch of grains, and keep a jar of dressing in the fridge. When you walk in the door, half the work is already done. None of these recipes are fancy, and that is the point. Fast, reliable, plant-based dinners are how you stay vegan on the hard days, and the hard days are the ones that matter.
