How to Brew Better Coffee at Home: A No-Nonsense Guide

Most bad coffee at home is not the fault of the machine. It comes down to a handful of basics: stale beans, the wrong grind, a guessed ratio and water that is too hot or too cold. Fix those and even a cheap French press will make a cup you are proud of.

1. Start with fresh beans

Coffee is at its best within a few weeks of roasting. Look for a roast date on the bag, not just a best-before date, and buy smaller bags more often. Store beans in an airtight container away from light and heat. The fridge is not your friend, because the beans pick up moisture and smells.

2. Grind just before brewing

Ground coffee goes stale fast. If you only make one upgrade, make it a burr grinder. Burr grinders give an even grind, which means even extraction and a cleaner, sweeter cup. Blade grinders chop unevenly, so you get bitter dust and sour chunks in the same brew.

Match the grind to the method:

  • French press – coarse, like sea salt.
  • Pour-over and filter – medium, like sand.
  • Moka pot – fine, but not powder.
  • Espresso – very fine.

3. Use a ratio, not a guess

A good starting point for most methods is 1 g of coffee to 16 g of water. For a big mug that is roughly 20 g of coffee to 320 ml of water. Weigh it with a kitchen scale for a week and you will be amazed how much more consistent your coffee gets. Like it stronger? Go to 1:15. Lighter? Try 1:17.

4. Get the water right

Use water just off the boil, around 92–96°C. Boiling water can scorch the coffee and pull out bitter flavours. If you do not have a thermometer, let the kettle sit for 30 seconds after it clicks off. If your tap water tastes of chlorine, filtered water makes a noticeable difference.

5. Pick a method that suits you

French press. Forgiving and full-bodied. Steep for four minutes, stir the crust, skim off the foam, then press slowly.

Pour-over. Clean and bright, and it shows off the flavour of good beans. Pour a little water first to let the coffee "bloom" for 30 seconds, then pour slowly in circles.

Moka pot. Strong, rich and perfect for lattes at home. Fill with hot water to speed it up and take it off the heat as soon as it starts to sputter.

AeroPress. Quick, portable, easy to clean and very hard to get wrong.

6. Taste and adjust

  • Sour or thin? Grind finer or brew a little longer.
  • Bitter or harsh? Grind coarser or brew a little shorter.

Change one thing at a time and you will dial it in within a few cups.
